The olives come from two prestigious production areas: Belpasso (CT) and Campobello di Mazzara (TP), from olive groves of 30-40 years at 300-600 meters above sea level. The harvest is carried out by hand between 10 October and 10 November. The extraction takes place with the cold continuous cycle method, thus preserving the organoleptic characteristics.
The extra virgin olive oil Zammara PGI Sicilia has a bright color, tending to emerald green.
With an acidity between 0.13 and 0.20, it offers a medium-intense fruity aroma and hints of green tomato and artichoke.
On the palate, the persistent bitter and spicy taste is accompanied by notes of green tomato and wild herbs.
