The drupes come from a production area that includes Belpasso and Paterno’ (CT), from olive groves 30-40 years old reaching an altitude of 400-500 meters above sea level. The Nocellara is harvested by hand-picking between October 10 and November 10. The extraction process uses the cold continuous cycle method.
The Nocellara Etnea Monocultivar extra virgin olive oil has a beautiful emerald green color with yellow reflections. Its acidity ranges between 0.13 and 0.20. It offers a medium fruity aroma with aromatic notes of artichoke and fresh grass. On the palate, the taste is slightly bitter and spicy, with fresh accents of green tomato and wild herbs.
The Zammara Monocultivar extra virgin olive oil pairs elegantly with both cooked and raw fish, salads, and vegetables, enhancing their flavors.
