The drupes come from a production area that embraces Belpasso and Paterno’ (CT), from olive groves of 30-40 years that reach an altitude of 400-500 meters above sea level.
The Nocellara is harvested by hand between 10 October and 10 November.
The extraction process is carried out by the cold continuous cycle method.

The extra virgin olive oil of Nocellara Etnea Monocultivar presents a beautiful emerald green color with yellow reflections. Its acidity is between 0.13 and 0.20. It offers a medium fruity aroma, with aromatic notes of artichoke and fresh grass. On the palate, the taste is slightly bitter and spicy, with fresh accents of green tomato and wild herbs.

The extra virgin olive oil Zammara Monocultivar is combined in a refined way with both cooked and raw fish, salads and vegetables, enhancing the aromas.
