The Nocellara, Moresca, and Biancolilla olives come from Belpasso, Paterno’, and Ragalna (CT). There you will find olive groves with 30-40 years of history, at an altitude of 300-600 meters above sea level. Harvesting is done by hand-picking between October 10 and November 30. The cold extraction of the oil ensures the preservation of its organoleptic characteristics.
The varietal composition includes Nocellara, Moresca, and Biancolilla olives. The oil, with a green emerald color with yellow reflections, has an acidity between 0.13 and 0.20. On the nose, a light-medium fruity aroma with hints of tomato, artichoke, fresh grass, and bitter almond precedes a delicately bitter and spicy flavor, enriched by notes of green tomato and wild herbs.
Russo Frantoio extra virgin olive oil pairs magnificently with fish, both cooked and raw, fresh salads, and vegetables.
